Mine is the same as for years - a can of squirt cheese to squirt onto potatoe chips.


Here's recipes for BUF ex-patriots, to make beef on weck, and authentic rolls if you are ambitious. Bon Appetit ! (sorry - long post...my apologies to scroll fingers everywhere!)

Easy Beef on Kummelweck

Rump roast, Kaiser rolls (don't use rolls that contain egg), kosher salt, egg white, water, caraway seed, marjoram, onion powder, ground black pepper, McCormick's powdered aj jus mix.

First...cook the beef and refrigerate, saving the juices.
Second...Prepare the au jus mix.
Third...prepare the rolls.

Beef:

Scrape off all meat surfaces with a knife. If there is a band of fat and membrane, cut with a sharp knife so the roast won't buckle, but do not remove the fat. Season a 2 - 4 lb rump roast with marjoram, kosher salt, onion powder, and black pepper.
Place in a foil-lined pan.
Set into oven. Then turn oven on to 325 F. You don't need to pre-heat. Using a meat thermometer (a remote probe is best), remove at 115 F. Place pan on a hot plate and cover with foil. When cool, place in an air-tight container.

Carefully remove the foil containing juices, fold it and place it in the container, and refrigerate.
When fully refrigerated, remove beef and slice thinly with an electric knife.

Au jus - buy the commercial McCormick package - a dollar or so.

Prepare per package instructions, adding the reserved juices from the drippings you saved on the aluminum foil.

Rolls:

Set an oven rack high, and turn oven to broil.

Cut in half and place down on a baking sheet. Add a teaspoon or so of water to one egg white, and brush the rolls. Dust top and bottom to taste with caraway seed and kosher salt.

Place in the broiler, being very watchful. You want the egg wash to set the salt and seed, and the roll tops can burn easily.

To serve: Using tongs, douse enough beef in the au jus for a sandwich, remove and place on the roll. Beef on weck is best served juicy - dipping the top of the roll into the top of the au jus works well.


If you have the time (and moxie) to make original, authentic Kummelweck, here's the deal. Even the best of B&W purveyors don't make these labor-intensive, time-consuming things.:

Kummelweck Rolls, Makes 6

1 x package of dry yeast. Do not use quick-rise.
3/4 cup tepid potato water (80 - 100 F)
1 tsp sugar
1/2 cup mashed potatoes. Don't add salt but do reserve the liquid
1/2 cup milk
3 tbsp butter, melted
1 tsp salt
1 tbsp caraway seeds
3 cups all-purpose flour
1 cup bread flour
1 x egg white, beaten with 1 1/2 tsp water
x kosher salt for dusting
x caraway seeds for dusting

Procedures

1. Mix yeast with 1/4 cup of the tepid potato water and sugar in a separate bowl large enough to hold the remaining ingredients.
2. Combine mashed potatoes, 3/4 cup remaining potato water, milk, butter, salt and caraway seeds in a separate bowl.
3. When yeast mixture is foamy, stir in the contents of 2., above. Add the flour, a cup at a time, stirring until dough comes away from bowl.
4. Turn out onto floured board and let rest while you clean and butter a bowl. Knead dough 10 minutes, adding flour if necessary to create a smooth dough. I use a mixer with dough hooks, on the "Fold" setting.
5. Return to bowl and roll dough around to coat it with butter. Cover with a towel and let rise in warm place until double in bulk, about 1 to 2 hours. Punch dough down, knead again,
flouring as needed, for 1-2 minutes. Roll out and divide into six pieces.
6. Form each piece into a smooth ball. Then flatten ball slightly so that it is roll shaped. Set 2 inches apart on a lightly greased cookie sheet.
7. Cover loosely with towel and let rise until double in bulk, less than 1 hour.
8. Preheat oven to 375 F.
9. Make the star-shaped indentations with a spatula, and brush rolls with egg white mixture and sprinkle with desired amount of kosher salt and caraway seeds.
10. Bake 15 minutes, reduce heat to 325 F and bake 15-20 minutes, until rolls are medium brown.
11. Remove from oven and cool on baking rack.

Note: You can freeze the dough after the first rising. Thaw, continue with the second rise. They will not rise very much, but they still taste good.

Heh - we all know about squirt cheese cans operate. True story - my can "farted" on a chip just after BUF selected Willis McG. I can't say I disagreed with the squirt cheese can's commentary... :biggrin:

Here's an even easier Beef on Weck recipe:

Buy some decent sliced roast beef at the deli. Ask if they have au jus. If not buy some beef broth and simmer it down till it's reduced a bit. Swirl the beef in the au jus/broth to warm it up. Place on keiser roll. Sprinkle some kosher salt and caraway seed on the beef. Add horseradish. Close sandwich and enjoy. Easy.

They seem to trot out those dessert menus during or after a meal. Most folks say thanks or nothing at all as they place them on the table.

I say that if BUF picks your player, you go ahead and splurge !

Well, I can beat that. As a Texan, I'm sure she LOVES BRBQ. I BRBQ Wings with Buffalo wing sauce- Franks hot sauce & butter to taste. And don't forget the Blu Cheese & cellery.

EVERYONE that tries my wings like them better than traditional fried wings.

That is what I will be eating Thursday.

And congrats on the future Bills fan.

Draft Day is my 3rd Christmas (as opposed to the birth of Jesus and opening day), so I really go all out. I moved down to Charlotte NC this last year for work and have always had 5 things for draft day.

I have my draft board, I don't care whatcha say, but as stated in a previous thread, it's for cash. While up north in PA, it was easy to come across 2 things; Banana Peppers and Beef on Weck. Those were both staples, and this year I have been to 6 different stores (Food Lion, Fresh Market, Trader Joes, Fresh Market, Loews Foods, and Bi-Lo) and all of them say it's out of season. BULL****. You need to have that damn stuff...

I can't thank you guys enough for those recipes, I'll have to do them by scratch here and will scrap it all together.

A case of beer, stuffed BP, Beef on Weck, and some soy buffalo wings with my old man is one of the best times of the year for me. If you want recipes for any of mine let me know.

My friend is cooking a roast beef, then putting it on his slicer for Friday nights portion at his house. Maybe a side dish, like mac & tuna.
I'll probably just drink some iced tea, since it's a 20 + min. drive home.

EZ bake chicken wings:

Yes - I am aware of the constant WNY battles about where to get the best wings. Baked wings are pretty good, though...easy to make at home, no smelling up the house like with a deep fryer, or the mess with cleaning up same. Don't dismiss them out of hand until you've tried 'em.

The general recipe is on the side of a Frank's hot sauce bottle.

Get some wings from the grocery store, rinse, pat dry, and remove the tips and separate the uppers from the lowers. Poultry shears are best for this task. The shears also serve another function - easy cutting through the ubiquitous plastic clamshell packaging on this or that product. They do a great job at this. Saves yer fingers from cuts. Shears are cheap - 4 or 5 bucks max.

1. Preheat oven to 425 F.
2. Line a baking sheet with a raised edge with foil.
3. Lightly spray the foil with a cooking spray like PAM.
4. Put the wings onto the pan - for the lowers, put the outside side down first - that side is the one that might stick, and doing that helps, since halfway through, you flip them onto the other side.
5. DO NOT brush or spray additional oil on the wings - thinking that that will crisp 'em up. Wing skin has plenty of fat as is. If you add more, you will have a soggy, disappointing mess.
6. Bake for an hour or so - and flip them over halfway through.
7. DO NOT move them up to a broiler, thinking that they will get more crispy. Hot, baked, chicken wings are fat-laden fire bombs. They will ignite and burn in half a minute, and smoke will pour out into your domicile.
8. Toss a pat of margarine into a bowl with a lid. Add Frank's, other sauce if you like, some dried parsley flakes, salt, pepper to taste. I recommend adding a bit of turmeric - it adds an appealing color, has a good taste. It's a good thing to perk up any baked or roasted chicken. Try it - you will be pleased. Remove the wings from the foil with a spatula, and dump 'em into the shaker. Put the lid on and shake to coat.

Wow you guys have draft day menus??? Since the draft starts at 8PM I just eat regular dinner whatever that would have been. Guess I should get some good fried food on tap. And I like Vodka over beer.

By the way, work on your syntax. Insert "that" between "shocker" and "a". Leaving an incomplete, dangling interior sentence clause is not good.

3 things. They're chicken wings, not Buffalo wings. It's hot sauce, not Buffalo sauce. It's blue cheese, not blue cheese dressing. All red flags that you're not really from, or don't live in Buffalo.

You have my interest - beef on weck PIZZA?

There's the simple way to do it, with just a simple store bought self-rising pizza crust, add horseradish sauce, store bought roast beef, kosher salt, tomatoes (not the sauce), cover with chedder and jack cheese, and generous caraway. Cook 450 for 15 minutes, melts it down (I personally leave out the tomatoes on mine).

Now for how I make it (and yes, it's the Pizza Junction recipe given to me by an old associate, but with my changes).

Ingredients:

Top round beef, garlic powder, beef stock for the roast beef

Butter, flour, heavy cream, Kosher salt, caraway "seeds", cayenne pepper, Frank's Red Hot (I use "Blow Torch" sauce) and horseradish for sauce.

If you're REALLY hardcore about making it from scratch, the bread is flour, yeast, salt, sugar, water, and shortening.

1) Mix garlic powder and beef stock in bowl til smooth. I usually add a little garlic salt and crushed red pepper for taste, but to each their own.
2) When mixed, rub generously over steak top round. Put in an oven-safe bowl and cover with tin foil. I usually put it in the oven on 400 until internal temperature is 130. Not too dry, not too sloppy or undercooked.
3) I take an electric turkey knife and slice as thinly as possible. Let it cool.

4) Melt butter, add flour, heavy cream, kosher salt, caraway "seeds", cayenne pepper, and Frank's.
5) Mix vigorously, to say the least. You want a consistent and well spread sauce. While waiting, check on roast beef, see if it's warm and not scolding to the touch. Anything over freezing is fine, it just can't be frozen and dried.

6) If you really want to make your own dough, that's on you, but how they made theirs was with the ingredients above. I typically just get a self-rising frozen pizza crust.
7) Thaw it out, put on either an oven safe baking sheet or my preference a pizza tin. When spread, put the mixture from steps 4-5 generously on the middle 3/4ths of the pizza dough. Putting it towards the edges will cause dripping.
8) Add roast beef, cheddar and jack, tomatoes, and with a brush rub outer crust with more melted butter and sprinkle with caraway.

9) Preheat oven to 500 (HOT), cook for 15 minutes to crisp or 11-13 for doughy.

10) If you want to add anything else, go for it, but this is how I've made mine. Add hot wings and a stuffed pepper and you've got a well worth it coma on your hands.

Is schrimp the same as shrimp? What is cilanter - I know what cilantro is. And...avacoto? Seems to me that this beverage and salad negatively affect ones' spelling and grammatical construction abilities. :pimped:

Depending on the type of wing sauce or if it's fried I 85% agree.

The only wings I can stand having Ranch on are 1) when there's no bleu cheese and 2) if it's an asian/thai style wing, soy wings with ranch, or if it's that Hidden Valley bacon-flavored ranch.

Never tried to duplicate beef on weck.
Ceviche I've done plenty. Love the stuff.
