Vietnamese Pho. I'm told the broth takes forever. For the same reason, true long-term pit barbeque.

I use a mix available at an Asian food store in my town. What I've noticed about it is that it has quite an element of cinnamon in it, and I would not have guessed that.

For BBQ, pick up a Green Ggg, Primo XL, or other Kamado grill, some lump charcoal, and 12 hours and voila.
